Wood Chip could Chip Would

September 19, 2024
So- my husband owns and runs a tree pruning/removal company.  Anson Tree Care Corp, to be specific.  And as such, our most plentiful landscaping resource is wood chips.  We love em.  We use them along our borders, tree rings, playground area, and as a general ground cover.  Initially, I laid down black tarp to cover with the chips, J disagreed with this as he said that theres always more wood chips to cover weeds and you miss out on the nice soil breakdown that occurs with chips mulching and disintegrating into the soil.  I stubbornly ignored him and still laid down black tarp.  Now, a few years later, that soil is still poor and we are dealing with exposed black tarp in those areas.  Turns out, he was right.  So, advice that I would give, go ahead and sign up for a chip drop if one is available in your area.  Cover your area directly with wood chips and go ahead and pile it close to 5 inches high if your hoping to kill underlying weeds. I think chips make a lovely border and weed control.

Easter Week/ Or however you celebrate new life and the opportunity for a new you.

 March 25, 2024

This is Easter week.  I love it!! it happens to still be cold, snowy and brown; but I love the whole concept of new life and hope.

I really wish I knew much more about world religions.  What I understand of Bhudism is that we need to try to not attach ourselves to our old and flawed selves. Through meditation, breath, and enlightment we can be new in every moment.   Such is the same as with my interpretation of Christianity. Through the atonement of Christ, we can gain the grace needed to continually repent and be new and appreciative of God's gift of life.

All in all I love the celebration of all the new sprouts
and the opportunity to plan for a new harvest.

Weekend plans

March 22, 2024

Its the eve of our weekend.  The weather is sorta nice. We've had a breakin the usual lion weather for some lamb days this week, but sadly that seems to coming to an ebb. We fulfilled some Get-Out-Pass vouchers to go to watch an outdoor soccer game for later; but it seems pretty cold from my heated-blanket chair.  I know it gonna be fun... I just gotta start moving and get things packed and ready to leave.

This weekend I would really like to meet with some producers to find something delicious to share.  Hopefully get in contact with a few CSA's. All while doing double volleyball tournaments for my two oldest.  Its gonna be so awesome!!  ish....

Veggie Solution

 March 13, 2024

Right now we are on the cusp of spring.  I'm just starting to get a little trunkey in a sense that I'm ready to move on to a new season and let go of this long and lingering winter.  I live along the Wasatch Back portion of Utah.  Our Winter is really long. So- right now I'm self-medicating with planting seeds in my window wells.  I've salvaged old food containers, added potting mix and seeds, and viola; a bit of green worthy of Marry Lenox.

I am also continually struggling with my diet.  We have family pictures in a couple of weeks, and I think that the anticipation of them is only adding to my anxiety.  Today, i am hopping to remedy by moving my workout to the afternoon, thereby stabilizing my blood sugar during my most volnerable part of the day.  I also want to bring in new hobbies to replace bad habits. So- instead of orbiting around sugary fatty foods; I want to be gardening and cultivating beautiful spaces.

I think it's silly and the epitome of a 3rd world problem that this is my nemesis. But it is.  I am even utilizing my church's 12 step program as a guide.  Every piece of help can help.

Morning Oats

I absolutely love oatmeal.  Most of the time I don't even cook it. I eat it raw with fresh or dried fruit, some chopped nuts, and topped with chia, ground flax, wheat germ, and nut milk.  This holds me through the morning and every evidence shows it keeps my blood pressure low.

I buy it in bulk. Honeyville produces a 6 grain rolled one that produces a nutty and varied texture. So yummy!!

Why Share?

What and why I want to share..

What does food and where it came from mean to me?  Everything is food.. Just as the Popeye musical chants.

I am, and have always been a sucker for the underdog.  In games, movies, and all social settings, I generally root for the one without the unfair advantage. This may be due to 5’ 1” stature, or generally noncompetitive nature.  Non-the-less, I really like the feeling of giving someone small and unassuming, my adoration and support.

So how does the food I eat or share fit into this mentality? How and what I consume literally becomes what I am.  Am I consuming foods made with love, personal investment, and compassionate/ethical practices?  Or am I simply a victim of convenient circumstances?

So- here’s my journey of finding the best food I can, here in Summit County Utah. And sharing this adventure my plan.

Back again

January 29, 2024

Who says you can't revisit old journals... 14 years later!!!! So I've been there and back again and wanting to share insights and impressions recieved along the way.  But as for now, I;m starting a new adventure of co-creating a new business of providing locally sourced meal kits for vacation rentals in the Summit/Wasatch County areas.  Lyn Wood and I have bounced around ideas and intentions for a couple of months now and she has moved foreward with a letter of intent for a space in Henefer.  This is exciting!! My task is in sourcing and creating recipes.  I have been having so much fun in outreaching to producers and learning about small business resources.  I really think that this concept could change the world in giving people the opportunity to eat local foods and with the provided intentions of a ready to use meal kit, they can have some direction in doing so.

I hope I have a firm grasp of what I am getting myself into.  I have been blessed to stay at home with my children for the past 15 years.  But with this endeavor; i pray for the wisdom to focus and set appropriate limits.  Ode to allowing my work to recharge my batteries and fill my spirit with enthusiasm; thus in turn giving to my family and friends. "I'm still present!" I shout as my children take role.
